01 - 1 pound dried red kidney beans.
02 - 1/2 pound thick-cut bacon, diced.
03 - 1 pound andouille sausage, sliced.
04 - 1 1/2 cups diced onions.
05 - 1 cup diced celery.
06 - 1 cup diced green bell pepper.
07 - 4 cloves garlic, minced.
08 - 10 cups chicken stock.
09 - 1/4-1/2 pound smoked ham, diced.
10 - 2 teaspoons dried oregano.

# Step-by-Step Instructions:

01 - Sort beans, remove stones. Soak in cold water overnight or 12 hours minimum.
02 - Cook bacon until crispy. Brown sausage in bacon fat. Set meats aside.
03 - Cook onions, celery, and peppers until soft. Add garlic briefly.
04 - Return meats to pot. Add beans, stock, seasonings. Simmer uncovered 2 hours until tender.
05 - Smash some beans for thickness. Add remaining herbs. Season to taste.
