Cook the spaghetti according to package instructions. Drain, rinse under cold water, and set aside.

Heat 1 tbsp of vegetable oil in a large skillet over medium-high heat. Add the chicken slices, season with salt and pepper, and stir-fry for 5-6 minutes until golden brown. Remove and set aside.

In the same skillet, add remaining oil. Sauté garlic for 30 seconds until fragrant. Add mixed vegetables and stir-fry for 3-4 minutes until tender-crisp.

Return chicken to skillet. Add soy sauce, oyster sauce, sesame oil, sugar, ginger, and broth. Mix well and simmer for 2 minutes.

Stir in cornstarch mixture to thicken sauce. Add cooked spaghetti and toss until evenly combined. Garnish with green onions and serve hot.
