Prep chicken, peppers, and garlic by slicing the chicken, julienning the peppers, and mincing the garlic.

Mix soy sauce, oyster sauce, rice vinegar, and honey in a small bowl until well combined.

Heat oil in a large pan or wok over medium-high heat. Cook sliced chicken until browned and cooked through, about 5-6 minutes. Remove and set aside.

Add minced garlic to the same pan and stir-fry for 30 seconds until fragrant. Add julienned peppers and cook for 2-3 minutes until tender-crisp.

Return chicken to pan, add the prepared sauce, and toss everything well to coat. Simmer for 1–2 minutes until sauce thickens slightly.
