In a small bowl, sprinkle the gelatin over 1/4 cup of water and let it sit for about 5 minutes. It'll turn into a goopy mixture - this is exactly what you want!

Pour the sugar, corn syrup, and remaining 1/4 cup water into a medium saucepan. Stir it gently over medium heat until everything dissolves and the mixture looks clear.

Crank up the heat a bit and let the mixture come to a boil. Stick your candy thermometer in and watch until it hits 300°F (that's the hard-crack stage). This is super important for getting the right gum texture!

Take the pan off the heat and quickly stir in your bloomed gelatin, salt, food coloring drops, and whatever flavor extract you're using. Mix it all together really well so the flavor gets everywhere.

Pour the hot mixture into a heatproof bowl or onto a silicone mat and let it cool for about 20-30 minutes. You're looking for it to thicken up to something like honey consistency.

Dust your counter with powdered sugar, then dump the sticky gum mixture onto it. Knead it like dough until it feels smooth and doesn't stick to your hands anymore. Add more powdered sugar if it's too sticky.

Now for the fun part! Roll the gum into ropes, flatten it into sheets, or make little balls - whatever shapes you like. Place them on wax paper so they don't stick to anything.
