Place the chicken breasts between two sheets of plastic wrap or parchment paper. Use a meat mallet or rolling pin to gently pound the chicken to an even thickness, about 1/2-inch thick. This helps the chicken cook evenly and makes it easier to roll up.

In a small bowl, combine the chopped spinach, sun-dried tomatoes, crumbled feta cheese, and mozzarella cheese (if using). Stir until everything is well combined.

Season both sides of the chicken breasts with garlic powder, onion powder, dried oregano, salt, and pepper. Spoon a portion of the feta, spinach, and sun-dried tomato mixture onto the center of each chicken breast. Be generous, but make sure the filling is spread evenly along the center. Carefully roll up the chicken breasts around the filling, securing the ends with toothpicks or kitchen twine to hold the rolls together.

Heat olive oil in a large oven-safe skillet over medium-high heat. Once hot, add the chicken rolls to the skillet and sear on each side for about 2-3 minutes, or until golden brown. This step will give the chicken a nice crispy exterior.

Once the chicken is seared, transfer the skillet to the preheated oven. Bake the chicken for about 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C), and the juices run clear.
