# What You'll Gather:

01 - 1 lb ground beef (or ground turkey)
02 - 1 small onion, diced
03 - 2 cloves garlic, minced
04 - 1 packet (or 2 tbsp) taco seasoning
05 - ½ cup water
06 - 1 can (15 oz) black beans, drained and rinsed
07 - 1 can (10 oz) diced tomatoes with green chilies
08 - 1 cup frozen or canned corn (drained)

→ Casserole Layers

09 - 8 small corn tortillas (or 4 large flour tortillas, cut in halves)
10 - 2 cups shredded Mexican cheese blend
11 - ½ cup sour cream (optional)

12 - Diced tomatoes
13 - Chopped cilantro
14 - Sliced jalapeños

# Step-by-Step Instructions:

01 - Preheat oven to 375°F (190°C)
02 - Brown ground beef and onion (5-7 minutes). Add garlic, taco seasoning, and water. Stir in beans, tomatoes, and corn
03 - In a 9x13-inch dish, layer: tortillas, half the beef mixture, 1 cup cheese. Repeat layers. Add optional sour cream between layers
04 - Cover with foil, bake 20 minutes. Uncover and bake 10 more minutes until cheese is golden
05 - Cool 5-10 minutes. Add optional toppings like tomatoes, cilantro, jalapeños, or avocado
