Melt butter in a pan over medium heat and add those diced apples. Stir in both sugars, cinnamon, cornstarch, and lemon juice. Cook for 5-7 minutes until the apples are tender and the mixture is nicely thickened. Let it cool completely - this is important!

Preheat your oven to 400°F and line a baking sheet with parchment. Roll out the puff pastry and cut into 8 equal squares. This gives everyone a perfect portion!

Spoon 1-2 tablespoons of that gorgeous apple filling onto one half of each pastry square, leaving space around the edges. Fold the pastry over to make triangles, then press the edges with a fork to seal them up tight.
