In a bowl, mix together the mayonnaise, sweet chili sauce, sriracha, rice vinegar, soy sauce, minced garlic, honey, and sesame oil until smooth. Set aside about 1/4 of this mixture to use later as a dipping sauce.

Add the chicken pieces to the remaining sauce and toss until all pieces are well coated. Cover the bowl and put it in the fridge for at least 30 minutes, though 1-2 hours will give you more flavor.

While the chicken marinates, soak your wooden skewers in water for at least 30 minutes to prevent them from burning. When ready to cook, thread the marinated chicken pieces onto the skewers.

Heat your grill or grill pan to medium-high heat. Place the chicken skewers on the grill and cook for about 4-6 minutes on each side until the chicken is cooked through (reaches 165°F) and has some nice char marks.

Transfer the hot skewers to a serving plate. Drizzle with the reserved bang bang sauce, then sprinkle with chopped green onions and sesame seeds. Serve right away while still hot!
