Bang Bang Shrimp Tacos (Print Version)

# Ingredients:

01 - 1 pound large raw shrimp, peeled and deveined.
02 - 2 large eggs.
03 - 1.5 cups panko breadcrumbs.
04 - 1/2 cup tapioca flour.
05 - 1/2 teaspoon paprika.
06 - 1/2 teaspoon garlic powder.
07 - 1/4 teaspoon onion powder.
08 - Salt and black pepper to taste.
09 - Cooking spray.
10 - 1/2 cup mayonnaise.
11 - 1/4 cup thai sweet chili sauce.
12 - 1 teaspoon sriracha.
13 - 8 ounces coleslaw mix.
14 - 1/4 cup chopped cilantro.
15 - 1/4 cup chopped green onion.
16 - 2 tablespoons mayonnaise (for slaw).
17 - Juice of 1/2 lime.
18 - Sriracha to taste (for slaw).
19 - 10 flour tortillas.

# Instructions:

01 - Pat shrimp dry, set up dredging station with seasoned tapioca flour, eggs, and breadcrumbs.
02 - Coat shrimp in flour, egg, then breadcrumbs. Place in air fryer basket and spray with oil.
03 - Air fry at 390F for 7 minutes, flipping and spraying halfway through.
04 - Whisk together mayonnaise, sweet chili sauce and sriracha.
05 - Combine coleslaw mix, herbs, mayonnaise, lime juice and sriracha.
06 - Toss shrimp in sauce, warm tortillas, layer with slaw and shrimp.

# Notes:

01 - Can be made gluten-free with substitutions.
02 - Makes about 10 tacos.
03 - 3-4 shrimp per taco.
