Creamy Broccoli Chicken Bake (Print Version)

# Ingredients:

→ Casserole Base

01 - 2 cups cooked chicken, shredded or diced (leftover rotisserie works great!)
02 - 3 cups fresh broccoli florets, cut into bite-sized pieces
03 - 1 can (10.5 oz) cream of chicken soup
04 - ½ cup sour cream
05 - ½ cup mayonnaise
06 - 1 teaspoon garlic powder
07 - ½ teaspoon onion powder
08 - ½ teaspoon salt
09 - ¼ teaspoon black pepper
10 - 1 cup shredded cheddar cheese

→ Crunchy Topping

11 - ½ cup shredded cheddar cheese
12 - ½ cup crushed Ritz crackers
13 - 2 tablespoons butter, melted

# Instructions:

01 - Fire up your oven to 375°F. Grab a 9×13 baking dish and give it a quick spray or brush of oil so nothing sticks.
02 - In a big bowl, dump in your cream of chicken soup, sour cream, and mayo. This is gonna be our creamy dream team. Toss in the garlic powder, onion powder, salt and pepper, and give it all a good stir until it's smooth.
03 - Now fold in your chicken and broccoli. Make sure everything gets coated in that creamy goodness. Then throw in a cup of that shredded cheddar and mix it up. The cheese will melt and make everything extra delicious.
04 - Scrape all that goodness into your greased baking dish and spread it out evenly. Sprinkle the other half cup of cheese all over the top.
05 - In a small bowl, mix those crushed Ritz crackers with the melted butter until all the crumbs are coated. This is gonna give us that irresistible crunchy top. Sprinkle this mixture all over the casserole.
06 - Pop it in the oven, uncovered, and let it bake for about 25-30 minutes. You'll know it's done when the edges are bubbly and that topping is golden brown and crispy. Let it cool for about 5 minutes before digging in - trust me, it's worth the wait!

# Notes:

01 - You can totally prep this the night before - just keep the cracker topping separate in a baggie until you're ready to bake.
02 - If you want a lighter version, swap the mayo for Greek yogurt and use low-fat cheese. Still tastes amazing!
03 - This reheats beautifully. If you have leftovers (big if!), just cover with foil and warm at 350°F for about 15 minutes.
