Cajun Potato Soup (Print Version)

# Ingredients:

01 - 13 ounces andouille sausage, cut into 1/4-inch rounds.
02 - 1 small onion, chopped.
03 - 2 celery stalks, chopped.
04 - 4 cloves garlic, minced.
05 - 4 tablespoons all-purpose flour.
06 - 2 pounds Yukon gold potatoes, cut into 1-inch cubes.
07 - 3 cups chicken broth.
08 - 3 cups milk.
09 - 1/2 cup heavy cream.
10 - 2 teaspoons Cajun seasoning.
11 - Salt and pepper to taste.
12 - Shredded cheddar cheese for serving.
13 - Chopped green onions for serving.

# Instructions:

01 - Sauté sausage, onion, and celery in large pot over medium heat until onion softens. Season with salt and pepper.
02 - Stir in garlic and cook 30 seconds. Add flour and cook 1 minute more.
03 - Pour in broth, milk, cream, and Cajun seasoning. Stir well to combine and distribute flour.
04 - Add potatoes and simmer for 10 minutes or until tender.
05 - Ladle into bowls and top with shredded cheese and green onions.
