Creamy Homestyle Cheeseburger Soup (Print Version)

# Ingredients:

→ Base

01 - 1/2 pound ground beef
02 - 4 tablespoons butter, divided
03 - 4 cups potatoes, diced
04 - 3 cups chicken broth

→ Vegetables

05 - 3/4 cup carrots, diced
06 - 3/4 cup celery, diced
07 - 3/4 cup onion, diced

→ Dairy & Thickeners

08 - 1/4 cup all-purpose flour
09 - 1-2 cups Velveeta, cubed
10 - 1 1/2 cups whole milk
11 - 1/4 cup sour cream

→ Seasonings

12 - 1 teaspoon dried basil
13 - 1 teaspoon dried parsley
14 - 3/4 teaspoon salt
15 - 1/4 to 1/2 teaspoon black pepper

→ Optional Toppings

16 - Crispy onion rings
17 - Chopped green onions
18 - Crumbled bacon

# Instructions:

01 - In a large pot or Dutch oven, cook and crumble ground beef for 6-8 minutes until no longer pink. Drain and set aside.
02 - Melt 1 tablespoon butter in the same pot. Add carrots, celery, onions, basil, and parsley. Saute for about 10 minutes until vegetables are tender.
03 - Add potatoes, cooked beef, and chicken broth. Bring to a boil, reduce heat, cover, and simmer for 10-12 minutes until potatoes are tender.
04 - In a separate pan, melt 3 tablespoons butter over medium-low heat. Add flour and stir for 3-5 minutes until bubbling. Stir into soup and boil for 2 minutes.
05 - Reduce heat to low. Add Velveeta, milk, salt, and pepper. Once cheese melts, remove from heat and stir in sour cream.
06 - Top with optional onion rings, green onions, and bacon. Serve warm.
