Cheesy Potato Puffs

# Ingredients:

3 large eggs, beaten.

2 cups mashed potatoes, room temp.
03 -
1 cup Monterey Jack cheese, divided.
04 -
1/4 cup fresh chives, minced.

Salt and pepper.

Sour cream for serving.
# Instructions:

Heat oven to 400°F. Grease 24-cup mini muffin tin.
02 -
Stir potatoes, eggs, 3/4 cup cheese and chives until smooth. Season.
03 -
Scoop into muffin cups. Top with remaining cheese.
04 -
Cook 15-20 minutes until golden. Rest 5 minutes before removing.

Great for using leftover mashed potatoes.

Can make ahead and refrigerate before baking.
