Chicken Burrito Bowl (Print Version)

# Ingredients:

01 - Boneless skinless chicken breasts or thighs, 1 pound.
02 - Long-grain white rice, 1 cup.
03 - Black beans, 1 can (15 oz), rinsed and drained.
04 - Corn, 1 cup (canned or frozen).
05 - Onion, 1 medium, diced.
06 - Bell pepper, 1 medium, diced.
07 - Olive oil, 2 tablespoons.
08 - Ground cumin, 1 teaspoon.
09 - Chili powder, 1 teaspoon.
10 - Garlic powder, 1 teaspoon.
11 - Fresh lime juice, from 1 lime.
12 - Fresh cilantro, chopped, for garnish.
13 - Salt and pepper to taste.

# Instructions:

01 - Cut chicken into bite-size pieces. Mix with cumin, chili powder, garlic powder, salt and pepper.
02 - Heat oil in a large pan over medium-high heat. Cook seasoned chicken until golden, about 5-7 minutes.
03 - Put in onion and bell pepper with the chicken. Cook until veggies soften, about 3-4 minutes.
04 - Add rice, beans, and corn. Pour in water, bring to boil, then cover and simmer 15-20 minutes until rice is done.
05 - Fluff rice with fork. Squeeze lime juice over top. Add cilantro and your choice of toppings.

01 - Great for meal prep and leftovers.
02 - Can use chicken broth instead of water for more flavor.
