Chicken Cordon Bleu Meatloaf (Print Version)

# Ingredients:

01 - 2 pounds ground chicken.
02 - 1 egg.
03 - 1/4 cup plain breadcrumbs.
04 - 2 teaspoons minced onion.
05 - 1 1/2 teaspoons garlic powder.
06 - 1/2 teaspoon dried parsley.
07 - 1/4 cup mayonnaise.
08 - 6 slices chicken ham.
09 - 6 slices Swiss cheese.
10 - 3/4 cup panko breadcrumbs.
11 - 3 tablespoons butter.
12 - 3 tablespoons flour.
13 - 1/4 cup heavy cream.
14 - 1 cup milk.
15 - 1 tablespoon Dijon mustard.
16 - 1/2 cup Parmesan cheese.

# Instructions:

01 - Heat oven to 400°F. Mix chicken, egg, breadcrumbs, mayo, and seasonings.
02 - Spread half chicken mix in loaf pan. Top with ham, cheese. Cover with remaining mix.
03 - Bake 25 minutes. Add panko topping, bake 15 more minutes until golden.
04 - Make roux with butter and flour. Add cream, milk. Stir in mustard and cheese until smooth.
05 - Let meatloaf rest 5 minutes. Slice and serve with gravy.
