Chicken Tzatziki Rice (Print Version)

# Ingredients:

01 - 1 pound boneless skinless chicken breast or thighs, diced.
02 - 2 tablespoons lemon juice.
03 - 2 tablespoons olive oil.
04 - 1 tablespoon fresh parsley, chopped (or 1/2 teaspoon dried).
05 - 1 teaspoon fresh oregano, chopped (or 1/2 teaspoon dried).
06 - 1 teaspoon fresh thyme, chopped (or 1/4 teaspoon dried).
07 - 1 teaspoon smoked paprika.
08 - 3/4 teaspoon seasoned salt.
09 - 1/2 teaspoon ground cumin.
10 - 1/2 teaspoon onion powder.
11 - 1/2 teaspoon garlic powder.
12 - 1/4 teaspoon black pepper.
13 - 1/4 teaspoon turmeric.
14 - 1/8 teaspoon cayenne pepper.
15 - 1 cup long grain white rice, uncooked.
16 - 1 medium zucchini, grated (about 1 1/2 cups).
17 - 2 cups chicken broth.
18 - Tzatziki sauce for serving.
19 - Fresh herbs and lemon for garnish.

# Instructions:

01 - Grease a 9x13-inch baking dish with cooking spray.
02 - Mix chicken with lemon juice, oil, and all herbs and spices in the baking dish. Let stand 30 minutes while preheating oven to 375°F.
03 - Stir in uncooked rice, grated zucchini, and chicken broth with the marinated chicken.
04 - Cover tightly with foil and bake for 40 minutes until rice is tender and liquid is absorbed.
05 - If rice is still firm, cover and continue baking in 5-minute intervals until done.
06 - Fluff rice with fork, season to taste, and serve topped with tzatziki sauce and fresh herbs.

01 - Only use long grain white rice.
02 - Use smoked paprika for authentic flavor.
03 - Cover dish tightly to trap steam.
04 - Glass dishes need longer cooking time.
05 - Fluff with fork to prevent gummy rice.
