Chocolate Strawberry Swirl Cheesecake (Print Version)

# Ingredients:

→ Crust

01 - 2 cups chocolate cookie crumbs (about 20 cookies)
02 - 6 tablespoons unsalted butter, melted

→ Cheesecake Filling

03 - 3 (8-ounce) blocks cream cheese, softened
04 - 1 cup granulated sugar
05 - 3 large eggs
06 - 1 teaspoon vanilla extract
07 - ½ cup sour cream
08 - ½ cup chocolate sauce or melted chocolate chips
09 - 1 cup fresh strawberries, sliced

→ Topping

10 - ½ cup chocolate ganache
11 - 8-10 fresh strawberries, whole or halved

# Instructions:

01 - Mix cookie crumbs with melted butter, press into 9-inch springform pan. Bake at 325°F for 8 minutes
02 - Beat cream cheese with sugar, add eggs one at a time, then mix in vanilla and sour cream until smooth
03 - Pour half the batter over crust, add strawberries and chocolate, top with remaining batter. Swirl with knife
04 - Place in water bath, bake 60-70 minutes until edges set. Cool in oven 1 hour, then refrigerate 4 hours
05 - Top with chocolate ganache and fresh strawberries

# Notes:

01 - Can substitute Greek yogurt for sour cream. Water bath helps prevent cracking but is optional
