Spicy Creamy Crockpot Cajun Pasta (Print Version)

# Ingredients:

→ Chicken & Seasonings

01 - 1 pound boneless skinless chicken breasts, cut into bite-sized chunks
02 - 1 tablespoon flavorful Cajun seasoning
03 - Salt and freshly ground black pepper to taste

→ Sauce Base

04 - 2 cups rich heavy cream
05 - 1 cup homemade or store-bought chicken broth
06 - ½ cup freshly grated Parmesan cheese

→ Vegetables & Aromatics

07 - 1 cup juicy diced tomatoes
08 - 1 red bell pepper, sliced into strips
09 - 1 green bell pepper, sliced into strips
10 - 3 cloves fresh garlic, finely minced

→ Pasta & Garnish

11 - 8 ounces dry penne pasta
12 - Fresh parsley leaves, roughly chopped

# Instructions:

01 - Toss those chicken pieces with the Cajun seasoning until they're all nicely coated. This is where the magic starts!
02 - Put your seasoned chicken into the crock pot. Pour in the cream, broth, and add the Parmesan. Toss in those colorful tomatoes, peppers, and garlic. Give everything a good stir to get it all mixed up.
03 - Cover and let it do its thing - about 4-5 hours on low or 2-3 hours on high. You'll know it's ready when the chicken is super tender.
04 - When you're about 15 minutes from the finish line, stir in the pasta. Make sure it's all covered by the liquid. Keep cooking until those noodles are just right - about 15-20 minutes more.
05 - Have a taste and add some salt and pepper if it needs it. Top with fresh parsley, and you're good to go!

01 - Want to make it lighter? Half-and-half works great instead of heavy cream.
