Creamy Parmesan Chicken & Rice (Print Version)

# Ingredients:

01 - Boneless skinless chicken breasts (4).
02 - Long-grain white rice (1 cup).
03 - Chicken broth (2 cups).
04 - Heavy cream (1 cup).
05 - Grated Parmesan cheese (1 cup).
06 - Small onion, finely chopped.
07 - Garlic cloves, minced (3).
08 - Olive oil (2 tablespoons).
09 - Salt and pepper to taste.
10 - Fresh parsley for garnish.

# Instructions:

01 - Season chicken with salt and pepper. Brown in oil until golden.
02 - In same pan, sauté onion and garlic until soft.
03 - Add rice and toast 2-3 minutes, stirring often.
04 - Pour in broth and cream, bring to simmer.
05 - Return chicken to pan. Cover and cook 20-25 minutes until done.
06 - Stir in Parmesan until creamy. Top with parsley.

# Notes:

01 - Keep pan tightly covered.
02 - Stir occasionally to prevent sticking.
03 - Chicken should reach 165°F.
