Parmesan Sausage Soup (Print Version)

# Ingredients:

01 - 1 pound Italian sausage, crumbled.
02 - 1 tablespoon olive oil.
03 - 1 onion, diced.
04 - 3 cloves garlic, minced.
05 - 4 cups chicken broth.
06 - 1 can (14.5 oz) diced tomatoes.
07 - 2 cups spinach, chopped.
08 - 1 cup heavy cream.
09 - 1/2 cup Parmesan cheese, grated.
10 - 1 teaspoon Italian seasoning.
11 - 1/2 teaspoon crushed red pepper flakes (optional).
12 - Salt and pepper to taste.

# Instructions:

01 - Heat oil in large pot over medium heat.
02 - Cook sausage until browned (5-7 minutes).
03 - Remove sausage, set aside.
04 - Cook onion and garlic until soft (2-3 minutes).
05 - Add broth and tomatoes, bring to simmer.
06 - Return sausage to pot.
07 - Add seasonings, simmer 10 minutes.
08 - Add spinach, cook 2-3 minutes.
09 - Reduce heat to low. Slowly stir in cream and Parmesan.
10 - Cook 2-3 minutes until creamy.
11 - Serve with extra Parmesan if desired.

# Notes:

01 - Temper cream to prevent curdling.
02 - Can use turkey sausage for lighter version.
03 - Stores well in fridge for 3-4 days.
