Creamy Sundried Tomato Chicken Pasta (Print Version)

# Ingredients:

01 - Penne pasta (8 ounces).
02 - Chicken tenderloins, sliced (1 pound).
03 - Salt (1/4 teaspoon plus more to taste).
04 - Paprika (1/4 teaspoon).
05 - Garlic cloves, minced (3).
06 - Sun-dried tomatoes, chopped (4 ounces).
07 - Olive oil (2 tablespoons).
08 - Half-and-half (1 cup).
09 - Mozzarella cheese, shredded (1 cup).
10 - Dried basil (1 tablespoon).
11 - Red pepper flakes (1/4 teaspoon).

# Instructions:

01 - Boil penne until al dente. Save 1/2 cup pasta water before draining.
02 - Season sliced chicken with salt and paprika.
03 - Sauté garlic and tomatoes in oil for 1 minute. Remove tomatoes.
04 - Sear chicken 1-2 minutes per side. Set aside.
05 - Simmer half-and-half, then whisk in mozzarella until smooth.
06 - Add pasta, chicken, tomatoes, basil and pepper flakes. Thin with pasta water if needed.

# Notes:

01 - Can use mix of cream and milk instead of half-and-half.
02 - Adjust red pepper flakes to taste.
