Crispy Beef Tacos (Print Version)

# Ingredients:

01 - 1 pound lean ground beef (90% lean).
02 - 1 packet taco seasoning mix.
03 - 3/4 cup red enchilada sauce.
04 - 2 1/2 cups shredded Oaxaca or Monterey Jack cheese.
05 - 10 fresh corn tortillas.
06 - 1 tablespoon olive oil for brushing.

# Instructions:

01 - Set your oven to 450°F and let it heat up fully.
02 - Cook the ground beef in a pan until brown. Stir in your taco seasoning and enchilada sauce. Let it bubble then take it off the heat.
03 - Get your tortillas soft by wrapping them in a damp paper towel and warming them up for about a minute.
04 - Brush oil on one side of each tortilla. Put it oil-side down, add cheese, meat, and more cheese on half, then fold it over.
05 - Put your filled tacos on a baking sheet. Make sure they're not touching. Bake them for 16 minutes until they're crispy.
06 - Let the tacos sit for 3 minutes before you eat them. They'll be crispier this way.

# Notes:

01 - Use a nonstick pan - foil can make the tortillas stick.
02 - Make sure tortillas are warm enough to fold without breaking.
