Heat oven to 350°F. Grease a baking dish.

Mix eggnog, milk, sugar, eggs, vanilla, cinnamon, nutmeg, and salt in a large bowl.

Add bread cubes and toss until well coated.

Pour into prepared baking dish. Bake for 35-40 minutes until set but slightly wiggly in center.

Beat egg in a bowl and set aside.

Mix eggnog, sugar, and cornstarch in a saucepan. Cook over medium heat, whisking constantly until gently boiling.

Slowly pour 1/3 of hot mixture into beaten egg, whisking quickly.

Return egg mixture to saucepan with remaining sauce. Heat on low until gently boiling, whisking constantly.

Remove from heat, stir in butter and rum if using. Pour warm sauce over bread pudding to serve.
