Chocolate Brownie Cookies (Print Version)

# Ingredients:

01 - Plain (all-purpose) flour, 95g (3/4 cup).
02 - Cocoa powder, 2 tablespoons.
03 - Baking powder, 1 teaspoon.
04 - Salt, 1/4 teaspoon.
05 - Dark chocolate, chopped, 225g (1 1/4 cups).
06 - Butter, salted or unsalted, 56g (1/4 cup).
07 - Large eggs at room temperature, 2.
08 - Caster sugar, 100g (3/4 cup).
09 - Demerara sugar, 90g (1/2 cup).
10 - Pure vanilla extract, 1 teaspoon.
11 - Dark or milk chocolate chips, 85g (1/2 cup).

# Instructions:

01 - Heat oven to 160°C fan (320°F) or 170°C (338°F) conventional. Line baking tray with parchment.
02 - Melt chocolate and butter over simmering water until smooth. Add vanilla and set aside.
03 - Beat eggs with both sugars until very light and fluffy using electric whisk.
04 - Sift flour, cocoa, baking powder and salt together. Stir in chocolate chips.
05 - Fold melted chocolate into egg mixture, then gently fold in dry ingredients until just combined.
06 - Scoop tablespoons of batter onto tray, space well apart. Bake 12-14 minutes until crackly on top.

# Notes:

01 - Watch chocolate closely when melting to avoid burning.
02 - Eggs must be room temperature for proper whipping.
03 - Let cool on tray before moving to rack.
