Garlic Sage Soup (Print Version)

# Ingredients:

01 - Whole garlic head, peeled and cut into slices.
02 - Chicken broth or stock, 8 cups.
03 - Fresh sage bunch.
04 - Large egg, yolk and white separated (only yolk needed).
05 - Good quality olive oil, 2/3 cup.
06 - Dijon-style mustard, 1 teaspoon.
07 - Salt to taste.

# Instructions:

01 - Pour stock into a pot and add sage. Drop in sliced garlic. Let it bubble gently for 10 minutes. Optional: strain out solids if you want it smooth.
02 - Mix yolk with mustard and salt in a bowl. Drizzle in oil while whisking to create mayo-like sauce.
03 - Slowly pour hot broth into mayo mixture while stirring. Pour everything back into the soup pot.
04 - Warm soup over low heat until hot but not boiling. Add your choice of toppings like croutons or olive oil drizzle.

# Notes:

01 - Keep heat low after adding egg mixture to prevent curdling.
02 - Best served with crusty bread for dipping.
03 - Can be made vegetarian using vegetable stock.
