German Apple Cake (Print Version)

# Ingredients:

01 - 2 cups all-purpose flour.
02 - 2 teaspoons ground cinnamon.
03 - 1 teaspoon baking soda.
04 - 1/2 teaspoon kosher salt.
05 - 3 eggs.
06 - 2 cups sugar.
07 - 1 cup canola or vegetable oil.
08 - 1 teaspoon vanilla extract.
09 - 4 cups peeled, cored and chopped apples.
10 - 3/4 cup pecans.
11 - 8 ounces cream cheese, softened.
12 - 1/2 cup butter, softened.
13 - 3 cups confectioners' sugar.
14 - 1/2 teaspoon kosher salt (for frosting).
15 - 1 teaspoon ground cinnamon (for frosting).
16 - Apple slices and chopped pecans for garnish.

# Instructions:

01 - Heat oven to 350°F. Line two 9-inch round cake pans with parchment and spray with baking spray.
02 - Whisk together flour, cinnamon, baking soda and salt.
03 - Beat eggs, sugar, oil and vanilla. Add flour mixture until just combined. Fold in apples and pecans.
04 - Divide batter between pans. Bake 50 minutes until done. Cool in pans.
05 - Beat cream cheese and butter. Add sugar gradually, then salt and cinnamon until fluffy.
06 - Layer cakes with frosting between and on top. Garnish with apple slices and pecans.

# Notes:

01 - Can be made in 9x13 pan instead.
02 - Extra frosting keeps well refrigerated.
03 - Toss garnish apples in lemon juice to prevent browning.
