Healthy Chicken and Vegetables Skillet (Print Version)

# Ingredients:

01 - 2 tablespoons olive oil, divided.
02 - 1 pound chicken breasts, cut in 1-inch pieces.
03 - 1/2 teaspoon garlic powder.
04 - 1/2 teaspoon onion powder.
05 - 1/2 teaspoon dried thyme.
06 - 1/2 teaspoon dried rosemary.
07 - 1/2 teaspoon paprika.
08 - 1/4-1/2 teaspoon chili powder.
09 - 1 small yellow onion, sliced.
10 - 3 cups broccoli florets.
11 - 1 zucchini, sliced.
12 - 1 yellow bell pepper, chunked.
13 - 1 red bell pepper, chunked.
14 - 1/4 cup low-sodium chicken broth.
15 - Fresh parsley for garnish.

# Instructions:

01 - Season chicken with salt, pepper and half the spice mix. Coat with oil.
02 - Brown chicken 6-8 minutes in oil until cooked. Remove to plate.
03 - Cook onions 2 minutes, add other vegetables and remaining spices. Cook 4-6 minutes until crisp-tender.
04 - Add broth, return chicken to pan. Cook 1 minute more. Garnish with parsley.

# Notes:

01 - Can substitute other quick-cooking vegetables.
02 - Wine or apple juice can replace broth.
03 - Best in cast iron skillet.
