Crispy Honey Garlic Chicken (Print Version)

# Ingredients:

01 - 1 pound boneless chicken thighs or breasts, cut in bite-size pieces.
02 - Canola or vegetable oil for frying (1 inch deep).
03 - 2 egg whites.
04 - 1 tablespoon cornstarch.
05 - Pinch of salt.
06 - 4 tablespoons honey.
07 - 2-3 garlic cloves, minced.
08 - 2 tablespoons soy sauce.
09 - 1 teaspoon fresh ground black pepper.
10 - Sesame seeds for topping.
11 - 1 green onion, sliced.

# Instructions:

01 - Heat oven to 200F. Line a baking sheet with parchment. Get a pot ready for sauce. Fill skillet with 1 inch oil.
02 - Mix egg whites, cornstarch and salt until fluffy. Add chicken pieces and let sit 10-15 minutes while oil heats.
03 - Heat oil to 350-360F in large skillet. Test with thermometer or wooden spoon handle - oil should bubble steadily.
04 - Fry chicken in batches for 3-4 minutes until golden. Drain on paper towels. Keep warm in oven between batches.
05 - Boil honey, garlic, soy sauce and pepper for 1-2 minutes until thickened. Toss with chicken.
06 - Top with sesame seeds and green onions. Serve hot.

# Notes:

01 - Can be kept warm in 200F oven for 30-45 minutes.
02 - Double sauce if serving over rice.
03 - Add sesame oil or oyster sauce to marinade for extra flavor.
