Irish Bacon Cabbage Soup (Print Version)

# Ingredients:

01 - 1/2 pound bacon, cut in quarters.
02 - 1 onion, finely chopped.
03 - 1/2 head cabbage, roughly chopped.
04 - 1/2 pound potatoes, diced.
05 - 1 carrot, thinly sliced.
06 - 4-5 cups chicken broth.
07 - 1 bay leaf.
08 - Kosher salt to taste.
09 - Black pepper to taste.
10 - Fresh parsley for garnish.

# Instructions:

01 - Crisp bacon pieces in large pot over medium heat for 5-7 minutes. Remove bacon but keep fat in pot.
02 - Sauté onion in bacon fat for 3-4 minutes until soft. Add carrots and cook 2 more minutes.
03 - Add potatoes and cabbage. Season with salt and pepper and cook 3-4 minutes.
04 - Add broth and bay leaf. Boil, then reduce heat and simmer 15-20 minutes until vegetables are tender.
05 - Return bacon to pot and adjust seasoning. Serve hot garnished with fresh parsley.

# Notes:

01 - Can use half beef broth for richer flavor.
02 - Excellent leftover the next day.
