Rich Chocolate Ricotta Cake (Print Version)

# Ingredients:

→ Cake

01 - 1 cup ricotta cheese
02 - 6 ounces dark chocolate (52% cocoa)
03 - 3 large eggs, room temperature
04 - 1 large egg yolk, room temperature
05 - 3/4 cup plus 2 1/2 tablespoons granulated sugar (180g total)
06 - 1/2 cup plus 1/2 tablespoon butter, softened (120g total)
07 - 1 cup pastry/cake flour
08 - 1 1/2 teaspoons baking powder
09 - 1 teaspoon vanilla extract
10 - 1 pinch salt

# Instructions:

01 - Heat oven to 350°F. Grease and flour an 8 or 9 inch round cake pan or 7 inch bundt pan
02 - Melt butter and chocolate together. Cool slightly. Beat with sugar, then add eggs one at a time, followed by ricotta, vanilla and salt
03 - Sift in flour and baking powder. Beat until smooth, about 2 minutes
04 - Pour into pan and bake 25-35 minutes until toothpick comes out clean. Cool 20 minutes in pan, then remove to wire rack

# Notes:

01 - To make cake flour: Replace 2 tablespoons of each cup of all-purpose flour with cornstarch
02 - Let ingredients come to room temperature 45-60 minutes before using
