Jalapeno Chicken (Print Version)

# Ingredients:

01 - 4 boneless skinless chicken breasts.
02 - 1 cup jalapeño peppers, diced (seeds removed for less heat).
03 - 1 cup cream cheese, softened.
04 - 1 cup shredded cheddar cheese.
05 - 1/2 cup sour cream.
06 - 1 tablespoon olive oil.
07 - 1 teaspoon garlic powder.
08 - 1 teaspoon onion powder.
09 - Salt and black pepper to taste.
10 - 1/2 teaspoon smoked paprika (optional).
11 - Fresh cilantro or parsley, chopped (for garnish).

# Instructions:

01 - Heat oven to 375°F.
02 - Mix softened cream cheese, diced jalapeños, cheddar cheese, and sour cream. Add garlic powder, onion powder, smoked paprika, salt, and pepper. Stir until well combined.
03 - Cut a pocket in each chicken breast. Fill each pocket with jalapeño cheese mixture. Season outside with salt and pepper.
04 - Heat olive oil in an oven-safe skillet over medium-high. Sear chicken 3-4 minutes per side until golden. Transfer skillet to oven and bake 20-25 minutes until internal temp reaches 165°F.
05 - Let rest a few minutes. Garnish with cilantro or parsley if desired. Serve warm.

01 - Remove jalapeño seeds for milder heat.
02 - Make sure cream cheese is softened for smooth mixing.
03 - Don't overstuff chicken or filling may leak.
04 - Let chicken rest before cutting to keep juices in.
