Jalapeno Chicken Burger (Print Version)

# Ingredients:

01 - Fresh ground chicken, 2 pounds.
02 - Fresh garlic cloves, minced, 4 pieces.
03 - Fresh onion, finely diced, 1/2 whole.
04 - Fresh jalapeno peppers, seeded and diced, 1-2 pieces.
05 - Paprika powder, 2 teaspoons.
06 - Kosher salt, 1 teaspoon.
07 - Fresh ground pepper, 1/2 teaspoon.
08 - Shredded pepper jack cheese, 3/4 cup.
09 - Fresh cilantro, chopped, 1/2 cup.
10 - Cooking oil (vegetable or olive).
11 - Sliced cheese (American or white cheddar), 8 slices.
12 - Fresh hamburger buns, 8 pieces.
13 - Whole garlic head for roasting, 1 piece.
14 - Mayonnaise, 1/3 cup.
15 - Ripe avocados, 2 large.
16 - Fresh lime juice from 1 lime.
17 - Fresh cilantro for guacamole, 2 tablespoons.

# Instructions:

01 - Wrap whole garlic in foil with olive oil, roast at 400°F for 40 minutes until soft. Mix squeezed garlic with mayo, salt, and pepper.
02 - Mash avocados in a bowl. Mix in fresh cilantro, lime juice, salt and pepper until well combined.
03 - Combine chicken with minced garlic, diced onion, chopped jalapenos, spices, pepper jack cheese, and cilantro. Form into 8 even patties.
04 - Cook on oiled grill grates for 8 minutes each side until done. Add cheese slices near the end of cooking.
05 - Toast the buns, spread with garlic mayo, add the cheese-topped patty, and top with fresh guacamole.

# Notes:

01 - Can substitute ground turkey for chicken if preferred.
02 - For pan-frying, cook in olive oil for 7-8 minutes first side, 5-6 minutes second side.
03 - Garlic mayo keeps in the fridge for up to 5 days.
