Mini Cheesecakes (Print Version)

# Ingredients:

01 - Graham cracker crumbs, 1 cup.
02 - Granulated sugar, 2 tablespoons plus 1/2 cup divided.
03 - Unsalted butter, melted, 4 tablespoons.
04 - Cream cheese, softened, 16 ounces.
05 - Vanilla extract, 1 teaspoon.
06 - Large eggs, 2.
07 - Fresh berries, chocolate sauce, or caramel for topping (optional).

# Instructions:

01 - Heat oven to 325°F. Put paper liners in a 12-cup muffin pan.
02 - Mix graham crumbs, 2 tablespoons sugar, and melted butter. Press 1 tablespoon into each liner. Bake 5 minutes, then cool.
03 - Beat cream cheese with remaining sugar until smooth. Mix in vanilla, then gently stir in eggs just until blended.
04 - Divide filling among crusts. Bake 15-17 minutes until centers are barely set.
05 - Cool completely, then chill at least 2 hours. Top with berries, sauce, or caramel before serving.

01 - Can add lemon zest to filling for extra flavor.
