Chocolate Coconut Layer Cake (Print Version)

# Ingredients:

→ Cake

01 - 1 (15.25 ounce) box devil's food cake mix
02 - 4 eggs
03 - 1 cup milk
04 - 1/2 cup vegetable oil

→ Coconut Filling

05 - 1 (14-ounce) bag sweetened flaked coconut, plus more for garnish
06 - 1 (14-ounce) can sweetened condensed milk
07 - 1 cup powdered sugar
08 - 1 teaspoon vanilla extract

→ Chocolate Ganache

09 - 2 cups semisweet chocolate chips
10 - 1/2 cup heavy cream

# Instructions:

01 - Preheat oven to 350°F (175°C). Grease and line a 9x13-inch pan with parchment paper.
02 - Beat cake mix, eggs, milk, and oil until smooth. Pour into pan and bake 30-35 minutes until done. Cool completely.
03 - Mix coconut, condensed milk, powdered sugar, and vanilla until combined. Spread over cooled cake. Refrigerate.
04 - Heat cream in microwave until hot. Add chocolate, let sit 2-3 minutes, then stir until smooth. Cool 5 minutes.
05 - Pour ganache over filling, spread evenly. Optional: top with toasted coconut. Refrigerate until set.

01 - Can substitute ganache with chocolate glaze
02 - Can be made into a poke cake - don't poke all the way through
03 - Serve chilled or at room temperature
