Cookie Bars (Print Version)

# Ingredients:

01 - All-purpose flour, 1 1/2 cups.
02 - Baking soda, 1 teaspoon.
03 - Ground cinnamon, 3/4 teaspoon.
04 - Fine salt, 1/2 teaspoon.
05 - Unsalted butter, room temperature, 3/4 cup.
06 - Light brown sugar, packed, 3/4 cup.
07 - Large eggs, room temperature, 2.
08 - Pure vanilla extract, 2 teaspoons.
09 - Quick-cooking oats, 2 cups.
10 - Raisins, 1 cup.
11 - Unsalted butter for frosting, room temperature, 1/2 cup.
12 - Powdered sugar, 1 1/2 cups.
13 - Pure maple syrup, 1 tablespoon.
14 - Heavy cream, room temperature, 1-2 tablespoons.
15 - Ground cinnamon for frosting, 1/2 teaspoon.
16 - Maple extract, 1/4 teaspoon (optional).

# Instructions:

01 - Heat oven to 350°F. Line 9x9 pan with parchment and spray with baking spray.
02 - Whisk flour, baking soda, cinnamon and salt in a bowl until combined.
03 - Beat butter and brown sugar until fluffy. Add eggs one at a time, then vanilla. Mix in dry ingredients, then fold in oats and raisins.
04 - Spread dough in pan evenly. Bake 18-20 minutes until edges are golden. Cool completely.
05 - Beat butter until smooth. Mix in sugar, maple syrup, cream, cinnamon and extract until creamy. Spread over cooled bars.

# Notes:

01 - Soak raisins in warm water for softer texture.
02 - Can be made without frosting.
03 - Works with gluten-free flour blend.
