Ingredients

01 1.5 pounds boneless skinless chicken breasts, cubed in 1-inch pieces.
02 1 teaspoon garlic powder.
03 1/4 teaspoon salt.
04 1/2 teaspoon black pepper.
05 1/2 teaspoon red pepper flakes.
06 2 tablespoons olive oil, divided.
07 1/2 cup chopped yellow onion.
08 2 cups asparagus spears, cut in 1-inch pieces.
09 1 tablespoon minced garlic.
10 8 ounces dry orzo.
11 2 1/2 cups low-sodium chicken broth.
12 2 sprigs fresh thyme.
13 1/3 cup half and half.
14 1/3 cup fresh grated parmesan.
15 2 cups fresh spinach.
16 Fresh parsley and parmesan for garnish.

Instructions

Step 01

Mix cubed chicken with garlic powder, salt, pepper and red pepper flakes in a bowl.

Step 02

Heat 1 tablespoon oil over medium-high heat. Cook chicken 10-12 minutes until browned. Remove to a bowl.

Step 03

Add remaining oil and cook asparagus 2 minutes until crisp-tender. Remove. Cook onion 3 minutes until soft.

Step 04

Add orzo and garlic, cook 3 minutes until lightly toasted. Add broth, simmer and stir. Cover and cook 7 minutes.

Step 05

Return chicken and asparagus. Add half and half, parmesan, spinach and thyme. Heat 1-2 minutes until warmed through.

Step 06

Plate the dish and garnish with fresh parsley and parmesan.
