Pastina Soup (Print Version)

# Ingredients:

01 - 1 cup pastina (star-shaped pasta).
02 - 1 medium yellow onion, chopped.
03 - 2 carrots, peeled and chopped.
04 - 2 celery stalks, chopped.
05 - 4 garlic cloves, minced.
06 - 6 cups low-sodium chicken or vegetable broth.
07 - 1 Parmesan rind (optional).
08 - Salt and black pepper to taste.
09 - Fresh parsley, chopped.
10 - Grated Parmesan cheese.
11 - Extra virgin olive oil.

# Instructions:

01 - Heat olive oil in large pot over medium heat. Cook onion, carrots, celery, and garlic for 5-7 minutes until soft.
02 - Add broth and Parmesan rind. Bring to boil, reduce heat and simmer 15-20 minutes.
03 - Add pastina to simmering broth, cook 6-8 minutes or until tender, stirring occasionally.
04 - Remove Parmesan rind. Season soup with salt and black pepper.
05 - Ladle into bowls, top with parsley, grated Parmesan, and olive oil drizzle.

# Notes:

01 - Parmesan rind adds extra flavor.
02 - Can use any small pasta shape.
03 - Keeps in fridge for 3 days.
04 - Add more broth when reheating.
