These peach and cream cheese mini tarts bring summer sweetness right to your table. After years of testing fruit tart recipes I discovered this perfect blend of buttery pastry fresh peaches and smooth cream cheese. The honey cinnamon glaze adds warmth making these little treats irresistible for any gathering.

A Summer Classic

What makes these tarts special is their simplicity. The peaches shine through without being overly sweet while the cream cheese adds just enough richness. I love how forgiving the rustic style is no need for perfect shapes here. The spiced honey drizzle takes them from lovely to absolutely memorable.

Your Kitchen Essentials

Choose ripe fragrant peaches for the best flavor. Full fat cream cheese creates that perfect creamy base. Your pastry needs cold butter good flour and just a touch of vinegar for tenderness. Keep ice water handy for the perfect dough texture. Raw honey makes the most flavorful glaze especially when paired with warm cinnamon and bright lemon.

Creating Your Tarts

Start with the pastry mixing flour sugar and salt. Work cold butter in until crumbly then add ice water and vinegar just until the dough comes together. While it chills slice your peaches and cream cheese thinly. Roll the dough into rustic shapes fold up the edges then layer with cream cheese and peaches. A brush of honey glaze and sprinkle of cinnamon sugar before baking creates magic.

Perfect Results Every Time

Keep everything cold while making the pastry it ensures that flaky texture we love. Let the dough rest in the fridge it makes rolling so much easier. Fresh peaches are worth seeking out their flavor makes these tarts special. A generous sprinkle of cinnamon sugar on the edges adds delightful crunch.

Fresh Is Best

These tarts taste best fresh from the oven while the pastry is crisp and the peaches are warm. If needed store extras in a sealed container but they rarely last beyond the first day in my house. The dough freezes beautifully though perfect for last minute baking.

The Perfect Finish

Serve these warm with a dollop of fresh whipped cream or vanilla ice cream. They pair beautifully with afternoon tea or make a lovely ending to any summer meal. The combination of warm tart and cold cream creates pure dessert magic.

Frequently Asked Questions

→ Can I make these tarts ahead?
These tarts taste best warm and fresh on the day they're baked. You can prepare the dough ahead and freeze it for up to 3 months, thawing in the fridge before use.
→ Why use fresh peaches instead of canned?
Fresh peaches maintain better texture and firmness when baked. They also provide better flavor and won't release excess moisture into the pastry.
→ Can I change the honey drizzle flavors?
The honey drizzle is very adaptable. Try adding cardamom, nutmeg, or clove for different flavor combinations that complement the peaches.
→ Why fold the dough multiple times?
The rolling and folding technique creates flaky layers in the pastry, similar to puff pastry. This results in a lighter, crispier texture.
→ Can I double the recipe?
Yes, this small-batch recipe can easily be doubled to make 8 tarts. Just make sure to maintain the same thickness when rolling the dough.
