Baked Peach Cheesecake (Print Version)

# Ingredients:

01 - 2 cups graham cracker crumbs.
02 - 1/8 cup light brown sugar.
03 - 1/2 teaspoon cinnamon.
04 - 6 tablespoons unsalted butter, melted.
05 - 2 pounds frozen peaches, thawed.
06 - 1 tablespoon lemon juice.
07 - 1/4 cup light or dark brown sugar.
08 - 1/4 cup granulated sugar.
09 - 2 teaspoons cornstarch.
10 - 8 tablespoons unsalted butter, melted.
11 - 1 1/3 cups flour.
12 - 1/2 cup light brown sugar.
13 - 1/4 cup granulated sugar.
14 - 1 1/2 teaspoons cinnamon.
15 - 24 ounces cream cheese, softened.
16 - 1 cup granulated sugar.
17 - 1 1/2 teaspoons flour or cornstarch.
18 - 3 large eggs, room temperature.
19 - 3/4 cup sour cream.
20 - 2 teaspoons vanilla extract.

# Instructions:

01 - Heat oven to 350°F. Line and grease an 8-inch springform pan.
02 - Mix graham crumbs, brown sugar, cinnamon, and melted butter. Press into pan bottom and sides. Bake 10 minutes. Lower heat to 325°F.
03 - Mix peaches with lemon juice, sugars, and cornstarch. Cut most peaches in half, leaving some whole. Set aside.
04 - Mix melted butter, flour, sugars, and cinnamon. Set aside.
05 - Beat cream cheese until smooth (2 minutes). Mix in sugar and flour. Add eggs one at a time on low. Mix in sour cream and vanilla. Don't overmix.
06 - Layer in pan: Half of cheesecake filling, a quarter of peaches, a quarter of crumb, another quarter of peaches, the rest of filling, and half of crumb. Save remaining peaches and crumb for later.
07 - Wrap pan in foil. Place in roasting pan with hot water halfway up sides.
08 - Bake 90 minutes. Don't open oven. Then crack door open for 30 minutes. Remove, cool for 30 minutes, then chill for 6 hours or overnight.
09 - Let cake stand 30-45 minutes. Roast remaining peaches at 400°F for 12-15 minutes. Warm remaining crumb 45 seconds in microwave. Top cake with roasted peaches and warm crumb.
