Quick grilled beef wraps (Print Version)

# Ingredients:

→ For the Filling

01 - 1 pound thinly sliced beef steak (ribeye works great!)
02 - 1 tablespoon olive oil
03 - 1 medium onion, sliced into thin strips
04 - 1 green bell pepper, cut into strips
05 - 1 cup sliced mushrooms (baby bellas are my favorite)
06 - Salt and black pepper, just enough to taste

→ For Assembly

07 - 4 large flour tortillas (burrito size works best)
08 - 1 cup shredded provolone cheese
09 - 1 cup shredded mozzarella cheese

# Instructions:

01 - Pour your olive oil into a large skillet and crank the heat to medium-high. Once it's hot, toss in the beef slices and cook until they're nicely browned - should take about 3-4 minutes. Sprinkle with salt and pepper while it cooks. When done, scoop the beef out and set it aside for a minute.
02 - In that same skillet (don't clean it - all that beefy flavor is gold!), toss in your onion, bell pepper, and mushrooms. Let them cook down until they're soft and starting to get some color, about 5 minutes. Stir them around occasionally.
03 - Now throw your beef back into the pan with all those lovely veggies. Give everything a good mix so the flavors can get friendly with each other. Let it all heat through for a minute or two.
04 - Lay out your tortillas on a clean surface. Grab handfuls of both cheeses and sprinkle them down the center of each tortilla. Don't be shy with the cheese - it's what makes these wraps special!
05 - Spoon your hot beef and veggie mixture evenly over the cheese on each tortilla. Try to keep the filling centered so you can roll these up neatly.
06 - Fold in the sides of each tortilla first, then roll them up tightly from the bottom. Think burrito-style! You want to make sure everything stays tucked inside.
07 - Heat up a skillet or grill pan over medium heat (no need for extra oil). Place your wraps seam-side down and cook for about 2-3 minutes until golden and crispy. Flip them over and cook the other side until the cheese inside is all melty and the outside is crisp.
08 - Cut each wrap in half diagonally (makes them easier to eat and looks nicer too) and serve them while they're still hot and the cheese is gooey. Grab some napkins - these can get a little messy, but that's part of the fun!

01 - These wraps make an awesome quick dinner when you're craving something like a Philly cheesesteak but want it portable.
02 - You can customize these with hot peppers, different cheese, or whatever veggies you have on hand.
03 - If you're meal prepping, you can make the filling ahead and just assemble and grill the wraps when you're ready to eat.
04 - These are great for lunch boxes too - just wrap in foil to keep them warm.
