Poblano Gouda Mac and Cheese (Print Version)

# Ingredients:

01 - 4 cups small pasta (macaroni, cavatelli, or shells).
02 - 4 poblano peppers.
03 - 6 tablespoons unsalted butter.
04 - 1/4 cup all-purpose flour.
05 - 2 1/4 cups heavy cream.
06 - 2 teaspoons mustard powder.
07 - 1/4 cup mascarpone cheese.
08 - 1/3 cup smoked gouda cheese.
09 - 1/3 cup aged white cheddar cheese.
10 - 1/3 cup sharp cheddar cheese.
11 - 1 teaspoon Cajun seasoning.
12 - 1/2 teaspoon cayenne.
13 - 1/2 teaspoon smoked paprika.
14 - 1/2 teaspoon black pepper.
15 - 1/2 teaspoon kosher salt.
16 - 1/4 cup panko breadcrumbs.

# Instructions:

01 - Turn broiler on high.
02 - Cut poblanos into strips, remove seeds.
03 - Broil poblanos 6-10 minutes until blackened.
04 - Cool peppers in ziplock bag for 5 minutes.
05 - Peel and chop poblanos.
06 - Cook pasta to 75% done in salted water.
07 - Heat oven to 350°F.
08 - Melt butter, whisk in flour until blonde.
09 - Slowly whisk in cream until smooth.
10 - Add mustard powder, cook 5 minutes until thick.
11 - Stir in all cheeses until melted.
12 - Add seasonings and chopped poblanos.
13 - Mix in cooked pasta.
14 - Transfer to baking dish.
15 - Top with breadcrumbs.
16 - Bake 15-20 minutes until edges bubble.
17 - Broil 1 minute to brown top.
18 - Rest 5 minutes before serving.

01 - Fresh pasta can go straight in without pre-cooking.
02 - Watch carefully when broiling breadcrumbs.
03 - Don't overbake or sauce may separate.
