Polish King's Cheesecake (Print Version)

# Ingredients:

01 - 2 cups all-purpose flour.
02 - 1/2 cup Dutch-processed cocoa powder.
03 - 1 cup unsalted butter, cold and cubed.
04 - 1/2 cup sugar.
05 - 1 egg yolk.
06 - 1 pound twaróg cheese (or farmer's cheese).
07 - 3/4 cup sugar.
08 - 4 large eggs, separated.
09 - 1 teaspoon vanilla extract.
10 - Zest of 1 orange (optional).

# Instructions:

01 - Mix flour, cocoa, sugar, and cold butter in a food processor until crumbly.
02 - Add egg yolk and blend until dough forms.
03 - Chill dough for 30 minutes.
04 - Beat twaróg, sugar, egg yolks, and vanilla until smooth.
05 - Whip egg whites separately until soft peaks form.
06 - Fold whipped whites into cheese mixture.
07 - Press most of the dough into the pan.
08 - Pour in cheese filling.
09 - Crumble remaining dough on top.
10 - Bake at 350°F for 45-50 minutes.
11 - Cool completely before serving.
