Portuguese Custard Cupcakes (Print Version)

# Ingredients:

01 - 8 tablespoons butter, chunked.
02 - 3½ cups whole milk.
03 - 1½ cups flour.
04 - ¼ teaspoon baking powder.
05 - 4 eggs.
06 - 3¼ cups sugar.
07 - 1 teaspoon vanilla extract.
08 - 2 lemons, zested.

# Instructions:

01 - Preheat oven to 350°F and grease muffin pans for 30 cupcakes.
02 - Melt butter in pan, add milk until warm.
03 - Whisk flour with baking powder.
04 - Beat eggs, gradually add sugar, vanilla, zest. Alternate adding milk mixture and flour mixture.
05 - Fill pans ¾ full, bake 35-38 minutes until edges golden.

# Notes:

01 - Centers will sink slightly when cooling.
02 - Can reduce sugar to 2½ cups.
03 - Store in refrigerator.
