Potato Galette (Print Version)

# Ingredients:

01 - 7-8 medium Yukon gold potatoes.
02 - 3 tbsp butter, melted.
03 - 2 tbsp olive oil.
04 - 1 1/4 cup Gruyere cheese.
05 - Parmigiano cheese, to taste.
06 - Seasoned salt and black pepper to taste.
07 - Flaky sea salt for finishing.
08 - Chives for garnish.

# Instructions:

01 - Slice potatoes very thin using a mandolin. Pat dry to remove excess moisture.
02 - Toss sliced potatoes with melted butter, seasoned salt, and pepper.
03 - Preheat 8-inch cast iron skillet with olive oil.
04 - Layer potatoes from center outward, adding cheese between layers. Create 6-7 layers, ending with potatoes.
05 - Cover with parchment and weight, cook on stovetop medium-high for 7-8 minutes.
06 - Remove weight and parchment, bake at 400F for 55 minutes.
07 - Flip onto board, add sea salt, cut into triangles. Garnish with chives and pepper.

01 - Use mandolin for even slices.
02 - Potatoes need generous seasoning.
03 - Weight helps compress layers while cooking.
