Slice potatoes very thin using a mandolin. Pat dry to remove excess moisture.

Toss sliced potatoes with melted butter, seasoned salt, and pepper.

Preheat 8-inch cast iron skillet with olive oil.

Layer potatoes from center outward, adding cheese between layers. Create 6-7 layers, ending with potatoes.

Cover with parchment and weight, cook on stovetop medium-high for 7-8 minutes.

Remove weight and parchment, bake at 400F for 55 minutes.

Flip onto board, add sea salt, cut into triangles. Garnish with chives and pepper.
