Roasted Pears with Blue Cheese (Print Version)

# Ingredients:

01 - 4 ripe but firm pears.
02 - 2 tablespoons unsalted butter, melted.
03 - 1/4 cup crumbled blue cheese.
04 - 1/4 cup toasted walnuts, chopped.
05 - 2 tablespoons honey.
06 - 1 tablespoon lemon juice.
07 - 1/2 teaspoon cinnamon.
08 - Fresh thyme for garnish.

# Instructions:

01 - Preheat oven to 375°F. Line baking sheet with parchment.
02 - Halve pears, remove cores, brush with butter and optional cinnamon.
03 - Roast cut-side up for 20-25 minutes until tender.
04 - Fill cavities with cheese and walnuts, drizzle honey and lemon juice.
05 - Return to oven 5 minutes until cheese melts.

# Notes:

01 - Can use Gorgonzola or feta instead of blue cheese.
02 - Best with firm pear varieties.
03 - Use quality honey for best flavor.
