One Skillet Salmon with Lemon Orzo (Print Version)

# Ingredients:

01 - 4 salmon fillets.
02 - 1 cup dry orzo pasta.
03 - 1 yellow onion, chopped.
04 - 3 garlic cloves, minced.
05 - 3 cups low sodium chicken broth.
06 - 5 oz baby spinach.
07 - 1/2 cup grated Parmesan.
08 - 1 tablespoon olive oil.
09 - 1 teaspoon butter.
10 - 1 teaspoon dried thyme.
11 - Juice of 1/2 lemon.
12 - 1 teaspoon sweet paprika.
13 - 1 teaspoon garlic powder.
14 - Salt and pepper to taste.

# Instructions:

01 - Season salmon with paprika, garlic powder, salt and pepper.
02 - Sear salmon 3-4 minutes per side in oil and butter. Remove.
03 - Cook onion and garlic until soft. Add orzo, thyme, toast 1 minute.
04 - Add broth, simmer until orzo absorbs liquid, about 8 minutes.
05 - Add spinach, lemon, Parmesan. Return salmon to heat through.

# Notes:

01 - Stir orzo occasionally to prevent sticking.
02 - Add more broth if needed for desired consistency.
