Seafood Bisque (Print Version)

# Ingredients:

01 - 1/2 pound cooked shrimp, chopped.
02 - 1/2 pound cooked crab meat.
03 - 1 tablespoon olive oil.
04 - 1/4 cup chopped celery.
05 - 1/4 cup chopped carrot.
06 - 1/2 cup chopped onion.
07 - 2 cloves minced garlic.
08 - 1 teaspoon paprika.
09 - 1/4 teaspoon cayenne pepper.
10 - 1/4 cup all-purpose flour.
11 - 2 tablespoons tomato paste.
12 - 4 cups seafood or chicken broth.
13 - 1 cup heavy cream.
14 - 2 tablespoons sherry.
15 - Fresh herbs for garnish.

# Instructions:

01 - Cook celery, carrot, onion in oil until soft. Add garlic.
02 - Add tomato paste and spices. Stir in flour to make roux. Gradually add broth.
03 - Cook 10-12 minutes until thickened. Add sherry.
04 - Add cream, shrimp, and crab. Heat 5 minutes. Season and garnish.

# Notes:

01 - Can use seafood stock for richer flavor.
02 - Sherry is optional.
