Seafood Lasagna (Print Version)

# Ingredients:

01 - 4 tablespoons butter.
02 - 4 tablespoons flour.
03 - 2 cups milk.
04 - 3/4 lb flounder fillets.
05 - 1 lb raw shrimp.
06 - 1 lb scallops.
07 - 1/2 cup white wine.
08 - 2 cups mushrooms.
09 - 1 cup crushed tomatoes.
10 - 3/4 cup heavy cream.
11 - 9 lasagna noodles.
12 - 1 cup Swiss cheese.
13 - 1/2 cup Parmesan cheese.

# Instructions:

01 - Make roux with butter and flour, gradually whisk in milk until thickened.
02 - Sauté seafood with garlic and onions just until done. Add wine, remove seafood.
03 - Cook mushrooms in same pan. Add béchamel, tomatoes, cream and seasonings.
04 - Layer sauce, seafood, noodles and cheese in buttered dish.
05 - Bake at 375°F for 40-50 minutes until golden.

# Notes:

01 - Cover with foil if browning too quickly.
02 - Serve with lemon wedges and parsley.
