Cozy Soup Recipe (Print Version)

# Ingredients:

01 - 1 pound ground lamb or beef.
02 - 1 large onion, diced.
03 - 3 cloves garlic, minced.
04 - 2 large carrots, diced.
05 - 2 stalks celery, diced.
06 - 1 cup frozen peas.
07 - 1 cup frozen corn.
08 - 4 cups beef broth.
09 - 2 tablespoons tomato paste.
10 - 1 tablespoon Worcestershire sauce.
11 - 1 teaspoon dried thyme.
12 - 1 bay leaf.
13 - Salt and pepper to taste.
14 - 4 cups prepared mashed potatoes.
15 - 2 tablespoons butter.
16 - 1/2 cup heavy cream (optional).
17 - Fresh parsley for garnish.

# Instructions:

01 - Cook ground meat in a large pot over medium heat until browned. Remove excess fat.
02 - Add onion, garlic, carrots and celery. Cook until soft, about 5 minutes.
03 - Mix in tomato paste, Worcestershire sauce, thyme, bay leaf, salt and pepper. Cook 2-3 minutes.
04 - Pour in broth and simmer for 20 minutes, stirring now and then.
05 - Stir in peas and corn, cook 5 more minutes.
06 - Remove bay leaf. Stir in butter and cream if using.
07 - Ladle into bowls and top with mashed potatoes and parsley.

# Notes:

01 - For thicker soup, blend some of it before adding potatoes.
02 - Works great with leftover mashed potatoes.
