Shrimp Scampi Linguine (Print Version)

# Ingredients:

01 - 2 pounds jumbo shrimp, peeled.
02 - 2 tablespoons melted butter.
03 - 1 cup panko breadcrumbs.
04 - 1/2 cup parmesan cheese.
05 - 2 teaspoons cajun seasoning, divided.
06 - 2 teaspoons lemon pepper, divided.
07 - 1/2 cup parsley.
08 - 1/2 cup tomatoes.
09 - 1/2 cup red onion.
10 - 1 tablespoon garlic paste.
11 - 2 tablespoons butter.
12 - 1.5 cups white wine.
13 - 2 cups heavy cream.
14 - 1 cup parmesan for sauce.
15 - 1 tablespoon lemon juice.
16 - 1 tablespoon lemon zest.
17 - 1 pound linguine.

# Instructions:

01 - Cook pasta per package. Season shrimp with seasonings then coat in panko mixture.
02 - Shallow fry breaded shrimp 3 minutes per side until golden.
03 - Sauté vegetables in butter. Add wine, reduce. Add cream, simmer until thick. Season and add cheese.
04 - Toss pasta in sauce. Top with shrimp and lemon zest.

# Notes:

01 - Panko coating should be light.
02 - Optional egg wash for fuller coating.
03 - Best served immediately.
